On our
Beer Menu, we have "always on tap" beers, representing our core recipes.
When we start to run low on these, we make more. Then we have our "often on tap" beers; these are recipes
that we repeat, but we sometimes run out, often because they take longer to make (for example: due to aging).
Then there are the "below the line" beers. These are one-offs; when they're gone, they're gone! As part of
learning & growing as a brewer, it is my goal to "make one of every style of beer".
Of course, beer styles are infinite in variety, so that's not truly practical. So we've set ourselves a course
to make each of the styles listed in the BJCP guidelines,
occasionally doing an "out of bounds" experimental beer (ex: for Christmas 2022 we made a Pecan Pie Scotch
Ale, "Wee Three Kings"), but mostly just working our way through the guideline styles.
We don't really object to "weirder", more experimental beers -- in fact, We think they're kind of fun! -- but we
want to try to get through "all the styles" -- mostly as a matter of craft-mastery -- so that's my main focus, with
only occasional detours. To keep track of which styles we've made and not, we've compiled this list; if you notice
any inaccuracies or ommissions, please let me know. The list is marked as:
strikethrough -- has been made & served.
underlined -- has been made, but was off-style (ex: Wee Three Kings, or Ghost-pepper Red).
As such, this style is still "open" to be made again.
